Rich gold in colour with aromas of acacia flower, white peach, sweet almond and exotic fruits. Fine, ample, but not too rich on the palate, with intense fruit flavours and luscious sweetness and a long, satisfying finish. An excellent accompaniment to foie gras, Asian dishes and desserts. It is also perfect with Roquefort cheese!
Hand picked through three or four successive 'tries' according to the optimum level of noble rot (botrytis cinerea) found on each bunch. After slow, gentle pressing temperature-controlled fermentation takes place in cement vats over a period of 3 to 4 weeks. Maturation takes place in oak barrels and cement vats.
