Tasting notes
This deeply impressive dessert wine combines freshness, concentration and purity of flavour to perfection. Sweet yes, but cut through with a piercing apricot note it remains focussed and energetic across the palate. Ripe and Botrytis - nuanced, the flavours of honey, sweet spices, caramel and dried fruits linger in the mouth. The sort of sweet wine that sends a tingle of sheer jot down the spine.
Production method
Pajzos grapes are harvested manually, one grape at a time, then crushed and added to a dry wine to give sweetness and aroma. The proportion of Pajzos grapes added to base wine varies, and is measured in puttonyos. One puttony represents a hod full of 30 kilos of grapes that is poured into the traditional 126 litre barrels of base wine. The number can vary from 3 to 6 (the highest being the sweetest). Grapes are left on their skins for one night and then pressed. The wines are aged in oak casks for a minimum of 3 years before bottling.
Producer notes
From the renowned wine-lover Jean-Louis Laborde of Chateau Clinet, who led a group that stepped in to preserve the great heritage of one of the wine world's historic regions during the immediate post-communist era. In so doing he brought fresh equipment and know-how to a region that was going off the rails due to a chronic lack of investment. Sunny, south-facing vineyards with an average altitude of 200m yield wines that retain their great traditional appeal but without the faults that were common in the region during that time. Amazingly - considering their Bordelais provenance these wines represent outstanding value!
