An aromatic bouquet of citrus and tropical fruit flavours, and crisp acidity. Canapi Grillo is delightfully refreshing to drink. Best served on its own, or with salads, fish, seafood & white meats.
Grapes are hand-harvested in mid-September at their peak of maturity. Following de-stemming they go directly in the pneumatic press where only a very light pressure is applied. Fermentation takes place at 18-C° with selected yeast for approximately 3 weeks.
Winemaker Andrea Valentinuzzi has a lot on his plate and not just fine Mediterranean seafood ! With a few thousand hectares of vineyards in Western Sicily to manage, a state of the art winery and more grape varieties than your average MW could name, it takes one hell of a talented winemaker to master all of that. An alchemist in the winery then but, at these prices, he's also bending the laws of Physics!
