Aromatic nose of citrus fruit and white flowers. Fruity and rich, with beautifully balanced acidity and flavours of ripe pears, it is perfect as an aperitif, or with a plate of seafood.
After gentle pressing in a pneumatic press, must is left in contact with the lees for 12 hours at 10C for optimum extraction of aromas. Temperature-controlled fermentation takes place in vat, followed by maturation on the lees in the vat until the end of January prior to filtering and bottling.
Winemaker Andrea Valentinuzzi has a lot on his plate and not just fine Mediterranean seafood ! With a few thousand hectares of vineyards in Western Sicily to manage, a state of the art winery and more grape varieties than your average MW could name, it takes one hell of a talented winemaker to master all of that. An alchemist in the winery then but, at these prices, he's also bending the laws of Physics!
