Tasting notes
Genious oenologist Ramonteau's Jurançon 'petit manseng', made by very late selective picking of extra-ripe fruit, is notable for its fine, luscious but uncloying sweetness. Serve very cold with dessert, strong cheese, or as an aperitif.
Production method
Grapes direct pressed, followed by fermentation in one and two year old barriques. Matured for 10 months in oak barrels.
Producer notes
The south-east facing vineyards of the domaine benefit from sunny autumns, permitting late harvest of the grapes. As 'pourriture noble' is rarely found in the Jurançon, special ripeness is achieved by 'passerillage' (over-ripening of grapes on the vine). Yields reduce dramatically with each later picked wine, from 30-35 hl/ha for Symphonie de Novembre down to only 6-8 hl/ha for Quintessence . These extraordinarily complex wines display a magical range of aromas and flavours. "Details make perfection, and perfection is never just a detail". Henri Ramonteu
