Tasting notes
From genius oenologist Henri Ramonteau, a luscious 100% petit manseng, notable for its uncloying sweetness, made by the daily picking ('passerillage') of extra-ripe fruit. For dessert, or as an aperitif, served very cold.
Production method
Grapes de-stemmed, followed by whole bunch maceration for 12 hours and gentle crushing in pneumatic press. Selection of juice (first pressing). Fermentation in 3, 4 and 5 year old barrels, followed by 6 months maturation in oak.
Producer notes
The south-east facing vineyards of the domaine benefit from sunny autumns, permitting late harvest of the grapes. As 'pourriture noble' is rarely found in the Jurançon, special ripeness is achieved by 'passerillage' (over-ripening of grapes on the vine). Yields reduce dramatically with each later picked wine, from 30-35 hl/ha for Symphonie de Novembre down to only 6-8 hl/ha for Quintessence .
