Tasting notes
Extremely limited; a must-have for lovers of Pinot Noir as it is expressed in the Loire - minerally and fresh with great definition and cut. Textured and flavourful, this wine has aromas of ripe, exotic fruits and flavours of sea salt, jellied red fruits, peach and fresh ginger. The aromas are not unlike those of a noble red Burgundy, while the rich, silky texture lingers on the palate.
Production method
Hand-picked grapes are de-stemmed and macerated using the 'saignée' method and direct pressing. This is followed by temperature-controlled fermentation in stainless steel vats. Maturation on fine lees for 12 months in the vat ensues. The viticulture is certified organic and biodynamic.
Producer notes
The Vacherons believe that good wine is made in the vineyards. Vacheron vineyards are planted on three different soils - flint, chalk and pebbles (cailloux) - accounting for the pre-eminence of their Sauvignon. Since the wines are vinified and stored separately, the balance of the final cuvée can be adjusted to achieve the best style before bottling. The Vacherons maintain that tradition need not be a handicap, nor should it halt progress, but that it remains a constant point of reference. The main objective for this extraordinarily dedicated and forward-looking Family Business is, as always, the very highest quality.
