Tasting notes
Pale lemon with fine mousse. Aromas and flavours of white peaches, apricots, apples and pears, with good acidity and medium weight on the palate. Macabeo gives added freshness and acidity, and Parellada lends floral delicate aromas. Creamy and well-balanced on the palate, with a long and delicate finish.
Production method
Fermentation of base wines at controlled temperatures, then blended with yeast and sugar and fermented in bottle at around 15C. Base wine at 10-10.5% ABV, then extra 1% of alcohol with second fermentation. Maturation for 12-15 months in bottle (minimum is 9 months for Cava) to emphasise fruit. Slow secondary fermentation in bottle in gyropalettes allows for development of a fine mousse.
Producer notes
Cava, with fourteen months' bottle age. Pale lemon in colour with delicate pearling, it has aromas of citrus and a hint of bay, with delicate acidity and long-lasting, fine bubbles. Puigmoltó means Ram's Hill hence the distinctive label. The estate has been cultivated by the same family for generations. New investment and a young team headed by winemaker Luis Raventós is taking the wines into a new dimension for the future - whilst retaining immense respect for experience and tradition, and the 'mystique' of the land.
