Tasting notes
Pale gold, brilliant and crystalline. Elegant nose of william pear, apricot and hawthorn, with some notes of aniseed. The palate express the aromatic purity of the fruits, with an intense minerality, roundness and balance. The finish is long and complex. Drink with scallops, monkfish tail with anise, risotto with truffles and asparagus or ravioli with ceps and garlic.
Production method
Direct pressing in pneumatic press. Temperature controlled fermentation in stainless steel vat. Ageing in vat for 6 months prior to bottling.
Producer notes
Bastide St Dominique, established in 1976, is situated near Courthézon to the east of the appellation of Châteauneuf du Pape. The Bastide of the name refers to a the rather grand and venerable fortified farmhouse where the impressive winery, barrel rooms, bottling line and tasting room are housed. The estate itself owns 10.5 hectares of vineyards in Châteauneuf du Pape (1.8 planted to white varieties) spanning seven Lieux-Dits in which the vines are at worst mature and at best ancient. In addition to this, the estate also purchases fruit from specific plots and specific growers, whether Côtes du Rhone or VDP, where they really love the quality and the terroir. All of this gives Eric Bonnet, one of the Rhône Valley's most talented young wine makers, plenty to work with and the results are deeply impressive. From VDP up to the CDNP at the top level, the wines are rich, with stunning purity of fruit, beautiful detail and real freshness.
